Where It Started

The Casati beer brewing journey started in winter 1993, with the Gonz living in a log cabin at the bottom of Mt Buller.  He had his season ticket in hand, and with no money for beer (or much else), Gonz took matters into his own hands, spotting in the last isle of the supermarket, a home brew kit.  The underground operation grew from there, and the Gonz has been brewing ever since.

What Will Be On Offer

Casati's will be an evolution of the Gonz coffee and beer experience.  We'll be located on Easey Street in Collingwood in the corner of his mates factory, bringing what the Gonz Crew have been experiencing for years to a more accessible location.  At Casati's you'll get coffee and beer, and, to match your beverage of choice, traditional european deli style meats & cheeses will be served at the Deli counter, in addition pastries & bread is going to be supplied by our mates Rustica Sourdough.  You can even sip your espresso at the bar (handcrafted by the Gonz) at the bar their will be 4 exotic coffee machines with matching grinders, with 4 different coffee roasters , one for each machine!

The Beers

Beer will be brewed inhouse out of Gonz's handbuilt system, at the moment we are brewing 40 litres a day. At the moment there are 5 beers, Umberto The Libirator (Italian Lager), Baptiste Saison, Belgian Ale, Coffee Porter and for the Hops fanatic The Gonz Zilla.

The Coffees

In the coffee department, The Gonzlab Sessantadue by Coffee Mio, The Gonzlab Blend by Genovese, Seven Seeds and Taalk Coffee.

Food

We have our good friends at Rustika http://www.rusticacanteen.com/ supplying us with a range of their delicious wares. There will also be a range of cheeses and meats and other typical Italian fare served with a good amount of Olive oil!

The rest will be spent on Coffee and other stock for Casati's and Grain, Bottles, Hops and Yeast. for the first few batches of Casati Beer.

We know our stuff, we've been brewing since 1993.  We've been testing the best coffee roasts in Melbourne and perfecting our unique roasting specifications. We just need a little cash to step up our operations, to bring Casatis to our good comrades and deal with some legal mumbo jumbo and the like. Our current brewing capacity is 40 litres a day.  Our aim is to upsize the brewing system to give us double this capacity, to meet what we hope will be an insatiable demand. Also like any new business there will also be the typical challenges, we've got about four months to fit out our new premises, spread the word, pull together all our supplies.  But with a little start up capital, combined with typical Gonz ingenuity and hard work we believe these challenges can be overcome in the same way Gonz has grown GONZLAB from his garage in Doreen to a factory in West Heidelberg.  We plan to be an establishment in proper inner north style - no deconstructed coffee here!
