OUR STORY

Hey, I'm Tim... the over-enthusiastic-d***head in that video above you hopefully just watched. 

In 2014 I started making mead, the kind of stuff that was really sweet and knocked your socks off. I flirted with the idea of opening Sydney's first meadery but was scared off by the up-front costs and scale of the project. It was years later in 2020 that my dream of opening Sydney's first meadery was re-kindled when I met a brewer at a wedding who told me all about the modern mead resurgence in America...

Weeks following my chance meeting, I took an old bottle of mead to my award-winning-homebrewer mate Josh and pitched my vision of modern craft mead in Sydney. He took my knock-your-socks-off mead, cut back the intensity and carbonated it on the spot in his kitchen and voila! We had our first ever sparkling craft mead. 

Since then I have travelled all over America researching modern practices in mead making and we have developed our Greedy Bear Original Mead along with a bunch of other wild and wonderful styles and flavours.

WHAT THE F*** IS MEAD ANYWAY!?

Mead is the world's oldest alcoholic beverage and at its purest is made by fermenting honey and water. The kind of craft mead Greedy Bear brews is mostly very low in sweetness, carbonated and super refreshing. Don't take our word for it though, we filmed an authentic first tasting of our Original Greedy Bear mead with some of our generous Greedy Bear - Inner Circle members:

THE WORLD'S MOST SUSTAINABLE DRINK

Not only is mead the world's oldest drink but it's also the world's most sustainable one too. Honey is delicious but it's also a by-product of our food system and without bees pollinating our crops, we'd be pretty hungry. Honey bees are responsible for 1 out of 3 bites of food on our plates and that number is probably a lot higher if you're a vegan, which ironically makes mead probably the most vegan friendly drink on the planet. 

We are turning a by-product of our food system into a delicious drink while using 6% of the energy and less than half the water that beer does.

THE ORIGINAL MEAD

Our Original flavour mead begins with honey bees collecting the pollen from blossoming River Red Gum trees local to NSW. Red Gum Honey has a bright light amber colour and has delicious aromas of the Australian bush after rain. It is full-bodied and has a refreshing fruity eucalyptus flavour with a medium sweetness. 

We combine the premium single varietal Red Gum honey with purified water and a feisty Norwegian farmhouse yeast to convert the raw natural sugar into mouth-watering Greedy Bear mead. The farmhouse yeast produces a variety of fruity ester aromas but predominantly manifests fresh citrus notes.

Our Original mead has a crispy dry finish with subtle notes of honey and citrus, pairing well with most foods but standouts include Mexican, Thai, and Indian cuisine as well as seafood and chicken. With a modest 5.5% ABV, our Original mead is light enough to responsibly enjoy a few but also strong enough to show off its depth and complexity.

We've partnered with our Sydney local friends at Rocks Brewing Co. in Alexandra to collaboratively brew our first batch and subsequent batches until we have enough capital for our own facility and taproom. We only have 369 cartons available for pre-order so it will be a first-come-first-serve until sold out. 

Each carton contains 16 x 375ml printed limited edition cans.
