Finders Distillery - A couple aiming to create more than just a product, but a story of Australian produce worth sharing.

Quit our Jobs. Travelled the world. Started a Distillery..... How it all began for us.

It all started for us four years ago. After years of studying and working full time we decided we needed a holiday. When figuring out where we wanted to go the conversation suddenly turned to “if we just sell everything, how long could we travel for?" With a very conscious budget, the number we landed on was 2 years. So, on November 1st, 2016 we set off on our round the world trip, first stop Nepal. We left Australia open to the idea we might settle somewhere overseas and although we didn’t find a new home on the trip, we did find a new interest.

We found ourselves visiting wineries, breweries and most of all distilleries everywhere we went. We tried rice wine in China, sake in Japan, craft beer in Portland, bourbon in Kentucky, pisco in South America, and took a self-guided whisk(e)y tour round Ireland and Scotland to name a few. We particularly enjoyed learning about the craftsmanship and the stories behind the distilleries we visited. We loved the industry and the long history associated with it and decided we needed to be a part of it.

After throwing ideas back on forth on our many road trips we came up with a unique idea for a series of products centred around our love of travel – The Location Series. It was the idea for the Location Series that made us really stop and consider starting our own distillery as an actual possibility. Travel has always been a big part of our lives. Kyle and I met travelling Europe almost 10 years ago and have been on countless trips together since. We loved the idea of combining our love of travel and discovering something new into a distillery.

So, from our small hotel room in Ireland on the 25th August 2018 we registered Finders Distillery and celebrated with an Irish Gunpowder Gin & Tonic.

What sets us apart - The Location Series

This is something we have kept under wraps for almost 2 years now and will be a core part of Finders Distillery.

For this series of products, we will be sourcing botanicals unique to a specific Australian region and creating a bespoke gin highlighting both the local ingredients and the towns they came from. We hope you will enjoy following along for the creation of each release. We want to create more than just a product, but a story of Australian produce worth sharing.

We hope the location series arouses interest and curiosity in our Finders community. Getting everyone excited to not only experience new flavours, but to travel and explore the beautiful places they came from.

The Team

Kyle learnt his trade in Engineering with the Australian Airforce and went on to spend 10 years working on military aircraft. Kyle has spent the last 1.5 years immersing himself in the distillation process and honing the recipe that is now Finders Distillery’s Australian Dry Gin. 

Or in short, Kyle has spent the last 1.5 years tasting Gin.

Georgia started her career in buying for The Iconic and later moved on to a senior buying role for an alcohol retailer. She brings her experience in Buying and Marketing within the alcohol Industry to the Finders Distillery Team & her inability to say no to a good Gin & Tonic.

Together we make up the small but enthusiastic Finders Distillery team. 

The Debut Product: The Finders Distillery Australian Dry Gin

After years of experimenting and taste testing it's finally here!!!!!

The initial idea was for a classic London Dry style gin - punchy, juniper forward with a complex and smooth palate. But we also wanted to show off certain local flavours to make this a true North Sydney Gin.

The end result is an Australian Dry Gin distilled in small batches using a recipe of nine botanicals. With orange peel and chamomile combining to create a delicate floral sweetness, while native gum and wattle seed build a beautifully complex yet smooth mouth feel. Oh and most importantly it's bloody delicious!!

This is your chance to get your hands on one (or more) of only 250 bottles from our hand bottled, labelled and numbered Batch #1 (UPDATE: the first batch is now sold out, but we have added rewards for Batch 2 so if you missed out you can still get a bottle of Finders). Also shout out to Ray Jacobs for buying the first ever commerically sold bottle through a charity auction last month to support bush fire & drought relief in Australia - legend!

The Space - Our Distillery & (soon to be) Tasting Room

Our little distillery is in St Leonards, on Sydney's North Shore. It is at this location that every bottle of Finders Distillery product is produced.

We use a 300L copper pot hybrid still and create each batch individually. We run all of our ingredients in a single distillation, using an exact quantity of each ingredient to produce the perfect taste, without the need for blending and mixing with neutral alcohol. We dilute our spirit to drinking strength using water that has been through our multi-stage filtration system. We then bottle, seal, label and package all our products by hand (just the two of us) under the same roof.

We are planning to start construction on our tasting room this year and are looking forward to welcoming you all to our distillery!

The Challenges

Our biggest challenge now is getting our product to market and opening our distillery door in St Leonards. Help us by buying a bottle and get some momentum going on our new business.
